So I am somewhat new to SP IT Edition. I am still evaluating the product for my company with the "ShadowProtectIT_Q2_2008.iso" demo disk.

I had been trying to backup a Dell PowerEdge 700 and restore it to a Dell PowerEdge 2900. Everytime I was doing the restore on the 2900 it only gave me the option to "Restore Original Windows XP MBR". All the other options were greyed out (such as "MBR from image file" and "Restore disk signature".) Needless to say whenever the restore completed the server would never boot properly. I would either get a blinking cursor or it would say "Error loading operating system".

For the life of me I could not figure out why... then it dawned on me. I had created the backup file while the server was still in windows. Once restarted the server (PE700) and booted off the SC disk and created the backup image the restore went flawlessly!

I guess you need to boot off the CD with IT edition to get the proper backup file otherwise it does not properly capture the MBR, etc.

Wow, that's simultaneously awesome and aggravating!  :)  Awesome - that you found a repro path, and aggravating that this happened (it shouldn't).  I've occasionally noticed this too but was never able to determine the steps to reproduce this.  I don't believe that this should actually be happening.  In other words, your image, captured within the live Windows, should have backed up the MBR, hidden tracks, and disk signature, as well as the source volume's in-use sectors.  I'll dig into this tomorrow to see if we can determine why this is occurring and resolve this issue.
